Very Versatile Meatballs
Ingredients
- 1 lb Gore's ground beef
- ½ cup dry bread crumbs
- ¼ cup milk
- ½ tsp salt
- ½ tsp pepper
- 1 tsp Worcestershire sauce
- ¼ cup diced onion (~1 small onion)
- 1 large egg
Instructions
- Mix all ingredients.
- Shape into meatballs & place on a cookie sheet (don’t let them touch).
- Bake 400 degrees for 20-25 minutes.

Mediterranean Braised Beef
Ingredients
- 2½ - 3 lbs Gore's boneless chuck roast
- ¼ cup All purpose flour
- 2 tbsp olive oil
- ¼ cup balsamic vinegar
- 2 small onions (halved & sliced)
- 4 medium shallots (sliced)
- ¼ cup pitted dates (chopped)
- ½ tsp salt
- ½ tsp pepper
- 1½ cup water
- 1½ cup vinegar
Instructions
- Preheat oven to 325 degrees.
- Lightly coat chuck roast with flour.
- Heat oil in Dutch oven over medium heat until hot. Brown pot roast in oil, remove.
- Add water & vinegar to Dutch oven, cook and stir until brown bits attached to pan are dissolved.
- Return chuck roast.
- Add onions, shallots, dates, salt & pepper, bring to a boil.
- Cover tightly and cook in oven 2-2 ½ hours (or until roast is fork tender).
- Remove from oven, keep warm.
- Cook liquid & onion/shallot mix over medium-high heat to desired consistency.
- Carve roast and serve with onion/shallot sauce.
